Caribbean Crispy Fish Tacos
Ingredients:
For the fish:
1 pound white fish fillets (such as cod or tilapia)
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and pepper, to taste
Vegetable oil, for frying
For the slaw:
2 cups shredded cabbage (green or purple)
1/2 cup diced red onion
1/2 cup diced bell pepper (any color)
1/4 cup chopped fresh cilantro
Juice of 1 lime
Salt and pepper, to taste
For the spicy mayo:
1/2 cup mayonnaise
1 tablespoon hot sauce (adjust according to your spice preference)
Juice of 1/2 lime
For serving:
8 small corn tortillas
Sliced avocado
Lime wedges
Chopped fresh cilantro
Instructions:
Prepare the slaw: In a large bowl, combine the shredded cabbage, diced red onion, diced bell pepper, chopped cilantro, lime juice, salt, and pepper. Toss everything together until well combined. Set aside to marinate while you prepare the rest of the components.
Prepare the spicy mayo: In a small bowl, mix together the mayonnaise, hot sauce, and lime juice. Adjust the amount of hot sauce based on your preference for spiciness. Set aside.
Prepare the fish: Pat the fish fillets dry with a paper towel. In a shallow dish, combine the flour, paprika, garlic powder, cayenne pepper, salt, and pepper. Dredge each fish fillet in the flour mixture, shaking off any excess.
Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Carefully place the coated fish fillets into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side, depending on the thickness of the fillets. Transfer the cooked fish to a paper towel-lined plate to drain any excess oil.
Warm the corn tortillas: Heat a dry skillet over medium heat and warm the tortillas, one at a time, for about 30 seconds on each side. Wrap them in a clean kitchen towel to keep them warm and pliable.
Assemble the tacos: Take a warmed tortilla and spread a spoonful of the spicy mayo on it. Place a piece of crispy fish on top, followed by a generous amount of the slaw. Garnish with sliced avocado, a squeeze of lime juice, and a sprinkle of chopped cilantro. Repeat with the remaining tortillas and fillings.
