Spicy Slow Cooker Baked Beans (Serves six to eight people)
Ingredients:
1 lb. dry navy beans, rinsed and sorted
1 large onion, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded and minced
1/2 cup molasses
1/4 cup ketchup
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
1 tbsp. Dijon mustard
1 tsp. garlic powder
1 tsp. smoked paprika
1 tsp. chili powder
1/2 tsp. cayenne pepper
1 tsp. salt
6 cups water
Instructions:
Rinse and sort the navy beans, and then place them in a large bowl. Cover the beans with water and let them soak overnight, or for at least 8 hours.
Drain the soaked beans and add them to a slow cooker along with the diced onion, diced red bell pepper, and minced jalapeno pepper.
In a separate bowl, whisk together the molasses, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, smoked paprika, chili powder, cayenne pepper, and salt until well combined.
Pour the mixture over the beans and stir well to ensure that the beans are evenly coated.
Add enough water to the slow cooker to cover the beans completely.
Cover the slow cooker and cook on high for 6-8 hours, or until the beans are tender and the sauce has thickened.
