Buffalo Chicken Dip
Ingredients:
2 cups shredded cooked chicken (you can use rotisserie chicken or cook chicken breasts and shred them)
8 oz (1 package) cream cheese, softened
1/2 cup ranch dressing
1/2 cup hot sauce (adjust to your preferred level of spiciness)
1 cup shredded cheddar cheese
1/2 cup crumbled blue cheese (optional, for added flavor)
1/2 cup diced celery
1/4 cup diced green onions (scallions)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
In a medium-sized mixing bowl, combine the softened cream cheese, ranch dressing, hot sauce, garlic powder, onion powder, salt, and black pepper. Mix until all the ingredients are well combined.
Add the shredded chicken, shredded cheddar cheese, and crumbled blue cheese (if using) to the cream cheese mixture. Stir to evenly distribute the ingredients and coat the chicken with the sauce.
Grease the inside of your slow cooker to prevent sticking, or use a slow cooker liner for easy cleanup.
Transfer the mixture to the slow cooker and spread it out evenly.
Cook the dip on the LOW setting for about 1-2 hours, or until the cheese is melted and the dip is hot and bubbly. You can also cook it on HIGH for a shorter period, but be sure to keep an eye on it to avoid overcooking.
About 15-30 minutes before serving, add the diced celery and green onions on top of the dip. These will provide a nice crunch and freshness to the dish.
Once the Buffalo Chicken Dip is heated through and the cheese is fully melted, switch the slow cooker to the "Warm" setting to keep it at the desired serving temperature.
Serve the dip with tortilla chips, celery sticks, carrot sticks, or sliced baguette for dipping. You can also offer additional hot sauce on the side for those who like it extra spicy.
