Spicy Caldo Verde
Ingredients:
4 cups kale, thinly sliced
3 medium-sized potatoes, peeled and diced
1 large onion, finely chopped
4 cloves garlic, minced
1 chorizo sausage, sliced
6 cups chicken or vegetable broth
1/2 cup olive oil
1 teaspoon red pepper flakes (adjust to taste)
Salt and black pepper to taste
1 bay leaf
1 lemon, cut into wedges for serving
Instructions:
Prepare the Kale: Wash the kale thoroughly and remove the tough stems. Roll the leaves tightly and slice them into thin ribbons. Set aside.
Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onions are translucent and fragrant.
Add the Chorizo: Add the sliced chorizo to the pot. Sauté for about 5 minutes, allowing the sausage to release its flavorful oils and brown slightly.

Add the Kale: Once the potatoes are tender, add the sliced kale to the pot. Simmer for an additional 5-7 minutes until the kale is cooked but still vibrant green.
Serve Hot: Ladle the spicy Caldo Verde into bowls. Squeeze a wedge of lemon over each serving for a burst of citrusy freshness. Optionally, serve with crusty bread on the side.
Garnish (Optional): For an extra touch, you can drizzle a bit of olive oil on top, sprinkle more red pepper flakes, or add a pinch of grated Parmesan cheese.
