Biryani Stew
Spicy Biryani Stew (Serves 6-8 people)
Ingredients:
2 cups basmati rice
1 lb boneless chicken, cut into small pieces
2 cups mixed vegetables (carrots, green beans, peas, potatoes)
1 onion, chopped
2 garlic cloves, minced
1-inch piece ginger, grated
2 tbsp vegetable oil
2 tbsp biryani spice mix (or a blend of cumin, coriander, turmeric, garam masala)
1 tsp red chili powder (or to taste)
2 cups chicken broth
Salt to taste
Chopped cilantro and sliced green chilies for garnish
Directions:
Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.
In a large pot or Dutch oven, heat the oil over medium heat. Add the onions and cook until translucent, about 5 minutes.
Add the garlic and ginger, and cook for another 2-3 minutes.
Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
Add the vegetables, biryani spice mix, and red chili powder. Stir to combine and cook for another 5 minutes.
Add the rice to the pot and stir well.
Pour in the chicken broth and add salt to taste. Bring to a boil.
Reduce the heat to low, cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
Remove from heat and let it sit for 5 minutes.
Garnish with chopped cilantro and sliced green chilies, if desired.
Serve hot and enjoy your delicious spicy biryani stew!
Note: You can substitute the chicken with lamb or beef, or make it vegetarian by using vegetable broth and skipping the meat.
