Spicy Slow Cooker Lima Beans (Serves six to eight people)
Ingredients:
1 lb. dried lima beans, rinsed and sorted
1 large onion, diced
1 red bell pepper, diced
2 jalapeno peppers, seeded and minced
1/2 cup tomato sauce
1/4 cup brown sugar
1/4 cup apple cider vinegar
2 tbsp. Dijon mustard
1 tbsp. Worcestershire sauce
1 tbsp. smoked paprika
1 tsp. garlic powder
1 tsp. chili powder
1/2 tsp. cayenne pepper
1 tsp. salt
6 cups water
Instructions:
Rinse and sort the lima beans, and then place them in a large bowl. Cover the beans with water and let them soak overnight, or for at least 8 hours.
Drain the soaked beans and add them to a slow cooker along with the diced onion, diced red bell pepper, and minced jalapeno peppers.
In a separate bowl, whisk together the tomato sauce, brown sugar, apple cider vinegar, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, chili powder, cayenne pepper, and salt until well combined.
Pour the mixture over the beans and stir well to ensure that the beans are evenly coated.
Add enough water to the slow cooker to cover the beans completely.
Cover the slow cooker and cook on high for 6-8 hours, or until the beans are tender and the sauce has thickened.
