Ingredients:
2 pounds (about 900g) lean ground beef
1 large onion, finely diced
4 cloves garlic, minced
2 bell peppers (any color), chopped
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes, undrained
1 can (6 oz) tomato paste
1 cup beef broth
1 cup corn kernels (fresh, frozen, or canned)
2 tablespoons chili powder
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 teaspoon cayenne pepper (adjust for desired heat)
1 teaspoon dried oregano
Salt and black pepper to taste
1/4 cup fresh cilantro, chopped (for garnish)
Shredded cheddar cheese, sour cream, and sliced green onions (optional toppings)
Instructions:
In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat and transfer the beef to the slow cooker.
In the same skillet, sauté the diced onions and minced garlic until they become translucent. Add the chopped bell peppers and cook for an additional 2-3 minutes.
Transfer the sautéed vegetables to the slow cooker with the cooked ground beef.
Add the black beans, kidney beans, diced tomatoes (with their juice), tomato paste, beef broth, and corn kernels to the slow cooker.
Season the mixture with chili powder, smoked paprika, ground cumin, cayenne pepper, dried oregano, salt, and black pepper. Stir well to combine all the ingredients.
Set the slow cooker on low heat and cook for 6-8 hours, allowing the flavors to meld and the chili to thicken.
Before serving, taste and adjust the seasoning if necessary. If you prefer a spicier kick, you can add more cayenne pepper.
Ladle the spicy chili into bowls, and garnish with chopped cilantro. Serve hot, and let your guests customize their bowls with shredded cheddar cheese, a dollop of sour cream, and sliced green onions if desired.
Enjoy this fiery fiesta slow cooker chili con carne with your favorite toppings and perhaps a side of warm cornbread for a satisfying and spicy meal!
