Spicy Watermelon Gazpacho
Ingredients:
4 cups watermelon, cubed
2 tomatoes, diced
1 cucumber, diced
1/2 red onion, diced
1 jalapeño pepper, seeded and minced (optional)
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
2 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
In a blender, combine all of the ingredients and blend until smooth.
Pour the gazpacho into a serving bowl and chill for at least 30 minutes before serving.
Garnish with additional cilantro and mint, if desired.
Tips:
For a spicier gazpacho, add more jalapeño pepper.
For a smoother gazpacho, strain it through a fine-mesh sieve after blending.
Serve the gazpacho with a side of crusty bread or crackers.
