Mexican Carne Asada:
Ingredients:
2 pounds flank steak
1/2 cup freshly squeezed lime juice
4 cloves garlic, minced
1/4 cup chopped fresh cilantro
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
Flour or corn tortillas, for serving
Salsa, guacamole, sour cream, shredded cheese, and other toppings, as desired
Instructions:
In a large bowl, whisk together the lime juice, garlic, cilantro, cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper.
Add the flank steak to the marinade and turn to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
Heat a grill or grill pan to high heat. Remove the steak from the marinade and discard any excess marinade.
Grill the steak for 3-5 minutes per side, until it is cooked to your desired doneness. Remove the steak from the grill and let it rest for 5-10 minutes before slicing thinly across the grain.
Serve the sliced steak with tortillas and your choice of toppings like salsa, guacamole, sour cream, shredded cheese, and chopped cilantro.
