Spicy Slow Cooker Pulled Pork Tacos
Spicy Slow Cooker Pulled Pork Tacos (serves six to eight people)
Ingredients:
4 pounds pork shoulder or pork butt, boneless
1 large onion, sliced
4 cloves garlic, minced
1 cup chicken or vegetable broth
1 cup tomato sauce
1/4 cup apple cider vinegar
2 tablespoons brown sugar
2 tablespoons chili powder
2 teaspoons cumin
2 teaspoons paprika
1 teaspoon cayenne pepper (adjust for desired spiciness)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional, for extra heat)
Corn tortillas
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Sliced jalapenos, diced onions, shredded lettuce, diced tomatoes, or any other desired taco toppings
Instructions:
Trim any excess fat from the pork shoulder and cut it into a few large chunks if needed to fit in the slow cooker.
In a bowl, combine the minced garlic, brown sugar, chili powder, cumin, paprika, cayenne pepper, salt, black pepper, and red pepper flakes (if using). Mix well to make a spice rub.
Rub the spice mixture evenly over the pork, making sure to cover all sides.
Place the sliced onion at the bottom of the slow cooker and place the seasoned pork on top.
In a separate bowl, whisk together the chicken or vegetable broth, tomato sauce, and apple cider vinegar. Pour the mixture over the pork.
Cover the slow cooker and cook on low heat for 8 to 10 hours, or on high heat for 4 to 6 hours, until the pork is tender and easily shreds with a fork.
Once the pork is cooked, remove it from the slow cooker and transfer it to a large cutting board or a plate. Use two forks to shred the meat into small pieces.
If desired, skim off any excess fat from the cooking liquid in the slow cooker. Return the shredded pork to the slow cooker and mix it with the cooking liquid to moisten the meat.
Warm the corn tortillas in a dry skillet or on a grill until pliable.
To assemble the tacos, place a spoonful of the pulled pork onto each tortilla. Add your desired toppings, such as chopped cilantro, diced onions, shredded lettuce, diced tomatoes, sliced jalapenos, or any other toppings you prefer.
Squeeze fresh lime juice over the tacos for extra flavor.
