Spicy Asian Hot Pot (Serves six to eight people)
Ingredients:
1.5 lbs thinly sliced beef (sirloin or ribeye)
1 lb shrimp, peeled and deveined
1 lb firm tofu, cubed
8 cups vegetable or chicken broth
1 cup shiitake mushrooms, sliced
1 cup enoki mushrooms, separated
1 cup baby bok choy, halved
1 cup napa cabbage, sliced
1 cup sliced carrots
1 cup snow peas, trimmed
1 cup shirataki noodles, rinsed and drained
4 green onions, sliced
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons gochujang (Korean red pepper paste)
2 tablespoons mirin
1 tablespoon grated ginger
4 cloves garlic, minced
1 teaspoon Sichuan peppercorns
1 teaspoon chili flakes (adjust to taste)
Salt and pepper to taste
Instructions:
Prepare the Broth:
In a large pot, bring the vegetable or chicken broth to a simmer.
Add soy sauce, sesame oil, gochujang, mirin, grated ginger, minced garlic, Sichuan peppercorns, and chili flakes. Stir well and let it simmer for 15-20 minutes.
