Spicy Asian Hot Pot (Serves six to eight people)

Ingredients:

• 1.5 lbs thinly sliced beef (sirloin or ribeye)

• 1 lb shrimp, peeled and deveined

• 1 lb firm tofu, cubed

• 8 cups vegetable or chicken broth

• 1 cup shiitake mushrooms, sliced

• 1 cup enoki mushrooms, separated

• 1 cup baby bok choy, halved

• 1 cup napa cabbage, sliced

• 1 cup sliced carrots

• 1 cup snow peas, trimmed

• 1 cup shirataki noodles, rinsed and drained

• 4 green onions, sliced

• 1/4 cup soy sauce

• 2 tablespoons sesame oil

• 2 tablespoons gochujang (Korean red pepper paste)

• 2 tablespoons mirin

• 1 tablespoon grated ginger

• 4 cloves garlic, minced

• 1 teaspoon Sichuan peppercorns

• 1 teaspoon chili flakes (adjust to taste)

• Salt and pepper to taste

Instructions:

• Prepare the Broth:

  • In a large pot, bring the vegetable or chicken broth to a simmer.

  • Add soy sauce, sesame oil, gochujang, mirin, grated ginger, minced garlic, Sichuan peppercorns, and chili flakes. Stir well and let it simmer for 15-20 minutes.
