Szechuan Marinade
Spicy Szechuan Marinade:
Ingredients:
1/4 cup soy sauce
2 tablespoons Chinese black vinegar or balsamic vinegar
2 tablespoons Szechuan peppercorns, ground
2 tablespoons chili paste or chili oil
1 tablespoon sesame oil
1 tablespoon honey
1 tablespoon minced garlic
1 tablespoon grated ginger
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
Instructions:
In a bowl, combine all the ingredients and mix well until the honey is fully dissolved.
Taste the marinade and adjust the seasoning if necessary. If you prefer a sweeter marinade, add more honey. If you want it spicier, add more chili paste or chili oil.
Place your choice of meat or tofu in a resealable plastic bag or a glass container.
Pour the marinade over the meat or tofu, making sure to coat it evenly.
Cover the bag or container and refrigerate for at least 30 minutes or up to overnight, depending on the thickness of the meat or tofu.
When you're ready to cook, remove the meat or tofu from the marinade and discard any excess marinade.
Grill, bake, or stir-fry the meat or tofu as desired.
Serve hot and enjoy the spicy Szechuan flavor!
Note: This recipe makes enough marinade for about 1 to 1.5 pounds of meat or tofu. You can also adjust the amount of marinade depending on how much meat or tofu you're cooking.
