Ingredients:
2.5 to 3 pounds of beef chuck roast, cut into 2-inch cubes
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 large onion, finely chopped
4 cloves garlic, minced
1 cup carrots, peeled and sliced
1 cup celery, sliced
1 cup mushrooms, sliced
2 tablespoons tomato paste
1 bottle (750 ml) of bold red wine (such as Cabernet Sauvignon or Merlot)
2 cups beef broth
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 teaspoon cayenne pepper (adjust to taste for spiciness)
1 cup pearl onions, peeled
1 cup frozen peas
Fresh parsley, chopped (for garnish)
Mashed potatoes or crusty bread (for serving)
Instructions:
In a large bowl, mix the flour, salt, and black pepper. Toss the beef cubes in the seasoned flour until well-coated.
Heat the olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, ensuring each side develops a golden crust. Transfer the browned beef to the slow cooker.
In the same skillet, sauté the chopped onion, minced garlic, carrots, celery, and mushrooms until softened. Add the tomato paste and cook for an additional 2 minutes.
Pour the red wine into the skillet, scraping the bottom to deglaze and capture all the flavorful bits. Bring the mixture to a simmer and let it cook for 5 minutes.
Transfer the wine mixture to the slow cooker, covering the beef.
Add the beef broth, bay leaves, thyme, rosemary, paprika, and cayenne pepper to the slow cooker. Mix well to combine.
Set the slow cooker on low heat and cook for 7-8 hours, allowing the flavors to meld and the beef to become tender.
About 30 minutes before serving, add the peeled pearl onions and frozen peas to the slow cooker. Stir gently.
