Jamaican Jerk Marinade
Spicy Jamaican Jerk Marinade:
Ingredients:
1/2 cup scallions, chopped
2 habanero peppers, seeded and chopped
4 cloves garlic, chopped
1 tablespoon fresh ginger, grated
2 tablespoons fresh thyme leaves
2 teaspoons ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 teaspoons salt
1/2 teaspoon black pepper
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup lime juice
Instructions:
In a blender or food processor, combine the scallions, habanero peppers, garlic, ginger, thyme, allspice, cinnamon, nutmeg, salt, and black pepper. Pulse until everything is finely chopped and well-combined.
With the blender or food processor running, slowly pour in the olive oil, soy sauce, and lime juice. Blend until the mixture is smooth and thick.
Taste the marinade and adjust the seasoning as needed. If you like it spicier, add more habanero peppers. If you like it milder, remove the seeds and ribs from the peppers before blending.
Transfer the marinade to a resealable plastic bag or a container with a tight-fitting lid.
Add your protein of choice (such as chicken, pork, or fish) to the marinade, making sure it is completely coated.
Seal the bag or container and marinate in the refrigerator for at least 2 hours or up to overnight.
When ready to cook, remove the protein from the marinade and discard any excess marinade.
Grill, bake, or pan-fry the protein until cooked to your desired doneness.
Serve with rice, beans, and your favorite Jamaican side dishes.
